Apple cider cake – Willey’s Weekly Bake 55

Another week another bake, this time I wanted to use up some apples from the garden. A family favourite is apple cake following an old recipe of my mums. This time I decided to mix it up a bit and try a new recipe which was on Waitrose. Let me tell you this, this cake tops any other apple cakes the cider when it’s bakes in the oven leaves a sweet sticky cake with a strong apple flavour. With autumn well and truly settled in now with just a peak of warm temperatures over the weekend it now means dark and dingy photos if I bake in an evening. From mid October I should hopefully be able to have more time at the weekends and produce better quality pictures and a range of bakes that may take a longer time to make.

Prep time: 30 min      

Bake time: 45mins to 1hour 

Ingredients

  • 5 good eating apples
  • 100ml of cider
  • 250g of Plain flour
  • 1 tsp of baking powder
  • 250g of Butter
  • 250g of Caster Sugar
  • 50g Sultanas
  • 2 eggs
  • 1 tsp of Cinnamon
  • 1 tsp of Vanilla essence

Method

  1. Preheat the oven to 160 degrees Celsius, then peel, core and chop four of the apples into 1cm chunks, with the last apple cut into slices (This is for the top of the cake).
  2. Cream together the butter and sugar until light and fluffy, add the eggs one at the time.A16740DE-0293-4853-824E-86966AA1E72A
  3. Once mixed add the vanilla extract and cider slowly until combined.
  4. Add the flour and baking powder into the mixture when no lumps add the chopped apple and sultanas.FB81B737-3B87-4D67-BBEF-2EA923EB8640
  5. Greese and lime a 23cm deep tin, fill with the mixture and decorate with the apple slices.3046B604-3EEA-4D31-A753-15324C1946C6
  6. Bake in the oven for 20 min until the top is starting to turn golden to prevent from darkening too much use tin foil to cover the top of the cake.
  7. Bake the cake in the oven for the remainder of the time, test by using s skewer in the middle of the cake it will be cooked if it comes out clean or with dry crumbs on.
